Beef & Broccolini Lo Mein

Get lo, get lo...get Beef & Broccolini Lo Mein!  
Do you think Lil John sings "Get LOw" when he eats his lo mein?  (These are the things that keep me up at night).  Perhaps Sandra Bullok sings it when doing so?  Her version of 'Get LOw',  in The Proposal, was quite amusing.  


Sing, or don't sing...but you must try this lo mein!!  The vegetables take center stage, the beef is more of an accent.  Together they play out wonderfully....the tender mushrooms and noodles....the crunchy broccolini and snow peas....hints of marinated beef throughout.

Blueberry-Corn Muffins

These blueberry-corn muffins are best described as the following:
Suppose a blueberry muffin met a corn muffin (perhaps they were co-workers, who gazed longingly at each other from across a crowed room), fell in love (after several attempts at asking Lil Miss Corn Muffin out - she was playing hard to get - she finally said yes; their fate was set), and had little muffin babies (triplets!!) - the little baby hybrid muffins would be these, blueberry-corn muffins....not too corny....not too blueberryish...just perfect.


Corn muffins and blueberry muffins are tied as being my favorites.  So why not merge the two, right?  Upon several unsuccessful attempts - they were either too cornmealy, or too cakey - I had come to the conclusion that I just would have to have one of each.

Confetti Pasta and Beans & #crazybird

I didn't quite know what to call this...I went with 'Confetti Pasta & Beans'.  It just sounded better than 'Refrigerator Haul-In-A-Bowl, with pasta and beans'....or, 'Roy G. Biv pasta and beans'.

Seeing how I represented every color in the rainbow, except blue, I opted to serve this in a pretty blue bowl.  You remember ROY G. BIV...the acronym used to memorize the order of colors in a rainbow?  Although it would have been a good description of this dish, I associate Roy G Biv as being a person - middle-aged, married, 2 kids, Laberdoodle, etc., not as dinner.


Let's just humor Mr. Biv, shall we?
Red = mini bell peppers, grape tomatoes
Orange = carrots
Yellow = mini bell peppers, corn, grape tomatoes
Green = scallions, cilantro
Blue = the bowl
Indigo = (see Blue)
Purple = red onion...it's purple-ish
**Update** I am a moron....ROY G. BIV....V='s Violet, not Purple....whoopsie!!!!

I downloaded this poster from Kashi.com - I love their products, and their mission statement/ commitment statement.  The four easy ideas they provide for Earth Day, can easily be performed any and/or everyday.  

#1 Buy Local Food ~ #2 Pay Bills Online ~ #3 Start A Carpool ~ #4 Adjust Your Thermostat


#1, #2, & #4, no problem...#3, not so much...we don't carpool, I must admit.  However, we are a one-car household, and living in the city also makes walking feasible; everything I need to do is a close by.  

I'd like to also mention:  
RECYCLE - most municipalities offer recycling services.

HANG DRY your laundry - even indoors, especially during hot summer months...why add more heat into you home by running the dryer?  

Finally, get yourself a RE-USABLE TRAVEL CUP, both for hot and cold - with a RE-USABLE STRAW...do you know how many of these end up in landfills? Here is a great post from the Ocean Conservancy (dot) org on plastic straws.

Greek Pitas

Lemme just say, these are not your ordinary thin ol' pita-pockets - Greek Pitas are thicker, soft and chewier...and just awesome.  When making these, you don't want them to puff up - creating the "pocket" as in Middle Eastern pitas - you want pita pimples instead.  Yes, pita pimples...we'll get to that in a few.

This is the final step to my Ultimate Pita Wrap(!) mission...Phase Three:  The Pita (Phase One:  The Chicken & Phase Two:  The Tzatziki - click on them to view).  Like, what am I gonna do with myself now......


The pitas at OPA! were my benchmark for this experiment.  I started playing around with my RI Pizza Dough recipe by making it less sticky, and cutting back on the yeast.  I still wanted all the air pockets in the crumb, but a heavier dough, overall.

Tzatziki

In my quest to build the ULTIMATE CHICKEN PITA WRAP(!)....I give you...Phase Two: Tzatziki (Phase One: The Chicken & Phase Three:  The Pita (coming soon) - click on them to view).
I never really thought I liked tzatziki.  I mean, it's yogurt-based...how good could it be?

This was my thought pattern years ago.  Then Greek yogurt hit the scene and it cured all my disdains for yogurt:  it is not runny, it has a creamy consistency, and the fat free variety is actually palatable.  


So when I finally put on my big-girl panties, and tried tzatziki,  I ACTUALLY LIKED IT!  Go figure. 

I used **Liberte 2.5% plain organic yogurt, but fat free could easily work - and if you prefer a thicker tzatziki, try using plain Greek-style yogurt.  

The cucumber is grated, then strained; I would recommend finely chopping it after it is strained, for a smooth texture - I will do this next time.

Chicken Souvlaki

I have been on a quest to re-create my favorite take-out chicken souvlaki pita wrap from OPA! Although it's considered fast food, OPA! is one of my favorites.  My mission, that I choose to accept, is THE ULTIMATE CHICKEN PITA WRAP - Phase One:  The Chicken....stay tuned for Phase Two - Tzatziki, and Phase Three -The Pita (click to view).

Their chicken is full of flavours - lemon, garlic, and oregano - skewered, grilled and charred to perfection.  So  ~let's do this~ minus the grill and the skewers...my metal skewers are M.I.A.; my grill still has snow on it...so I guess that makes this souvlaki-less chicken?

Needless to say, I've pretty much already made well over ONE MILLL-LION pancakes (I just put my pinkie finger up to my lips - like Dr Evil - after I typed that).

Chicken Pho

Sorry, I can't help myself.  I love talking all Valley Girl.
Oh, and by the way....it's like, pronounced "FA", not "FOE".  But that's okay, say it how ever you like, want - and if you're like, the type of person to correct other peoples' incorrect pronunciations, like, take a total chill pill!!


Nowhere else can Vietnamese soup be paired with 80's girlie pop culture.....nowhere but in mu brain, that is.  I know, right?  So totally freakin' tubular!!  So, like, totally make your own bodacious broth - to the max, or totally bag your face and like, go all stock-in-a-box.  I won't get all judgy.

Homemade Spaghetti-O's & Meatballs

Uh-Oo, spaghetti-O's!  First introduced in 1965; Campbell Soup Company launched Franco-American, which manufactured those little O's.  Their goal was to offer a fast meal of pasta that could be eaten with a spoon, so kids could eat "neat" and mess free.  Pfff!  Do you know how many spaghetti-O's stains I had on my clothes as a child?....even before I had boobs!!  I was a messy eater; today, I still have my days.


Franco-American put countless hours into researching and producing this dinner-in-a-can. Now, fast forward almost 50 years, and we attempt to recreate this canned classic from scratch - a healthier homemade version.  We have come full circle, Spaghetti-O's......full.circle.

Island Inspired: Local Breakfast Plate in Hawaii

Aloha!  Let's imagine that today we are in Hawaii.  Sure, you all are probably questioning my sanity with all this pretend island mumbo-jumbo...although it IS warming up outside...it's still chilly and the snow is still lingering on the sidewalks.  Being my first Spring in Alberta, I feel that things are just not happening with Mother Nature fast enough for my liking - I want to wear my sandals, Capri's, and flippy-floppies!!  In order to escape my arctic-like reality, I have recreated on of our favorite breakfasts while in Hawaii.


S & I  had the chance to visit Honolulu this past August.  It was our first visit to a "tropical" climate - you know, palm trees, coconut trees, peace lilies that grow OUTSIDE - not on the countertops and desktops in office cubicles.....

Island Inspired: Tropical Salsa/Salad

If you read my last post then you know about my pretend island....and no it's not weird that a 30-somthin' lady is playing pretend.  As the Mythbusters say "I reject your reality, and substitute my own"...I know, I know....just humor me.  



So call this a salsa, or call it a salad; whatever you call it - it's gooooood.  It was one of those what-do-I-have-in-my-pantry-at-this-very-moment situations.  A chopped jalapeno would be a nice addition...I didn't have one, so I used a few shakes of hot sauce.  Also, there are no tomatoes in this salsa - a nice big fat heirloom tomato would also work - but they aren't available right now, but when they are....whoooaa Mama!!
