I haven't bought jarred tomato sauce in over 10 years, not for pasta or pizza. This is my go-to recipe for a quick, easy, and fresh tasting marinara sauce. I am totally brand loyal when it comes to canned tomatoes; not all are created equal. I have tried many, many other brands, both gourmet and generic - NONE have ever matched the quality and consistency of Pastene "Kitchen Ready" crushed tomatoes. This is the brand my family used in their deli (as mentioned in my RI Pizza Dough post); it is the brand recommended in my Bacon Bucatini & Meatballs post, and it is the brand used for the marinara in my Fugetaboutit Burgers....in fact the marinara for those burgers is this recipe!
At one time, a simple sauce recipe was printed right on the actual "Kitchen Ready" can label (back in the 90's)....I have searched high and low for a can with said recipe on its label - I have not found one. Fear not, for I have committed it to memory!!
The Five Minute Marinara can be prepared and served with one pound of pasta; it can easily replace the jarred store-bought sauce....plus it's more economical, and tastes way better....it's mo' betta, trust me.
The Five Second Marinara is what I use for pizza sauce....five seconds to prepare, no cooking required, as the sauce cooks while it's on the pizza!! I don't even use a mixing bowl, I mix it right in the can. Dishwater conservation, people. Save the Whales!

Pastene Five Minute Marinara (with Five Second Option), recipe adapted from Pastene
makes just over 3 cups of prepared sauce
28 oz can of Pastene "Kitchen Ready" crushed tomatoes
2 TBS of olive oil
3-4 cloves of garlic, minced (or 1 tsp garlic powder)
1/4 cup of fresh basil leaves (or 1TBS dried Basil)
1/2 tsp salt
1/4 tsp fresh ground pepper
Heat a medium sized saucepan over medium/high heat. When the pan is good and hot (start the clock, count down the five minutes, come on! Humor me!!) add olive oil and garlic. Sizzle and stir the garlic for 30 seconds until translucent. Add the tomatoes, salt and pepper - stir well to combine. Bring to a boil (which happens almost instantly), the simmer for 3-4 minutes. Turn off the heat and remove the pan from the burner. Stir in the basil leaves.
This makes enough sauce to serve with 1 pound of prepared pasta.
Five Second Option (for pizza sauce)
28 oz can of Pastene "Kitchen Ready" crushed tomatoes
2 TBS of olive oil
1 tsp garlic powder
1 TBS dried basil leaves
1/2 tsp salt
1/4 tsp fresh ground pepper
Mix the olive oil, garlic powder, basil, salt and pepper into the canned tomatoes. Stir well to combine.
Makes enough sauce to top 2 pounds of pizza dough (with a little left over).

It is readily available throughout the Northeast...if your supermarket has an ethnic section for Italian food, it might be stocked there, or if you have an Italian specialty shop nearby, they would stock it as well. You can order on-line direct form the company, as a last resort: Pastene.com. Hope that helps, Selene!

DeleteI am ALL about quick dishes. Five minutes is a record! I LOVE this recipe! I will admit, I don't make my own tomato sauce. I've always used canned as a base for my pasta sauce. I hate the jarred stuff! Thanks so much for sharing every week at Wicked Good Wednesdays, Kim!

ReplyDeleteBut really, I've never been a brand loyal person. Most canned foods taste the same to me, unless it was home canned, then it's way better! I have been wanting to make my own marinara for awhile now, though, but haven't had a recipe. Now I have no excuses!
This is one of the rarities...it's Pastene or nuttin! I should send them this post :)....maybe they'd give me a free can :)
