Island Inspired: Tropical Salsa/Salad

If you read my last post then you know about my pretend island....and no it's not weird that a 30-somthin' lady is playing pretend.  As the Mythbusters say "I reject your reality, and substitute my own"...I know, I know....just humor me.  



So call this a salsa, or call it a salad; whatever you call it - it's gooooood.  It was one of those what-do-I-have-in-my-pantry-at-this-very-moment situations.  A chopped jalapeno would be a nice addition...I didn't have one, so I used a few shakes of hot sauce.  Also, there are no tomatoes in this salsa - a nice big fat heirloom tomato would also work - but they aren't available right now, but when they are....whoooaa Mama!!


I basically just stated chopping whatever was in my possession, and not fine dicey-chop -  I'm talking a nice honkin'- chunky chop.  I was just in one of those moods, I guess.



The mango and the orange lend a sweetness; the lime, onion, and cilantro a nice savory contrast; all wrapped up in creamy avocado.  We had this along side those beans and rice, and then again with chips & a couple of Red Stripes.  



Now, back to my Island......

Island Inspired:  Tropical Salsa/Salad
makes 4 servings

1 large mango, about 1 1/2 cups chopped
1 med orange, about 1/2 cup chopped
1 large avocado, about 2/3 cup chopped
2 TBS red onion, finely diced
2 TBS cilantro, finely chopped
1/2 lime, juiced
few dashes of hot sauce
salt & pepper to taste

Mix chopped mango, orange and avocado; fold in onion, and cilantro.  Top with lime juice, hot sauce, salt and pepper, toss to coat.
Serve with lime wedges.
