Get lo, get lo...get Beef & Broccolini Lo Mein!
Do you think Lil John sings "Get LOw" when he eats his lo mein? (These are the things that keep me up at night). Perhaps Sandra Bullok sings it when doing so? Her version of 'Get LOw', in The Proposal, was quite amusing.
Sing, or don't sing...but you must try this lo mein!! The vegetables take center stage, the beef is more of an accent. Together they play out wonderfully....the tender mushrooms and noodles....the crunchy broccolini and snow peas....hints of marinated beef throughout.
This is another one of those dishes that you can play around with, make it your own: double up on the mushrooms, omit the beef, toss it with a whole pound of pasta, etc.
This makes 3 full sized servings...dinner for S & I, then lunch for me the next day.....and I sang while dishing out each serving......get lo, get, low....to the windoooooooowwws, to the waaalllllllllss!!
Beef & Broccolini Lo Mein
adapted from, Marinated Beef and Vegetables recipe, Asian - the essential recipe collection
makes 3-4 servings
marinade
1 TBS rice vinegar
1 TBS soy sauce
2 tsp corn starch
2 tsp brown sugar
2 cloves of garlic, minced or grated
1 TBS sesame oil
1 pound of rump or strip steak
3 TBS grapeseed oil, or other high temperature cooking oil
2 tsp grated fresh ginger root
1 bunch broccolini, chopped into 1" pieces
8oz snow peas, cut lengthwise into thin strips
8oz mushrooms, sliced
4 scallions, chopped on a diagonal
1/2 cup beef stock
1/2 TBS cornstarch
1 TBS soy sauce
8oz dry spaghetti, or noodle of choice
Whisk the marinade ingredients together in a large bowl.
Slice steak into thin strips, against the grain, on a 45 degree angle.
Add meat into the marinade mixture, toss to coat, cover and set aside for 15 minutes.
Cook pasta according to manufacturer's instructions, drain, set aside.
Mix the cornstarch and soy sauce together in a small bowl, set aside
Heat 1 TBS of grapeseed oil in a large skillet or wok. When oil is hot, swirl grated ginger in the pan for 30 seconds. Stir-fry the steak for 2-3 minutes until medium rare - working in batches if necessary, as to not overcrowd the pan - remove from the skillet when cooked, set aside.
Heat remaining 2 TBS of grapeseed oil, stir-fry the broccolini, mushrooms, and snow peas for 2-3 minutes - this can be done in batches, as well, if needed.
Pour beef stock over all the cooked veggies, in the skillet, cover and steam for about a minute. Stir in the reserved cooked steak and the cornstarch/soy sauce mixture, cook until the juices start to thicken. Add in cooked noodles, tossing to coat for 2-3 minutes, or until the noodles have absorbed the liquids.
Top with chopped scallions when serving.
This looks so yummy! Lo Mein is one of my favorite things to order when getting take-out, and I've always been wanting to make some at home. I'll have to give it a try sometime! This looks delicious!

It can really be altered to suit any plan, low-carb (ditch the noodles), low fat (cut back on the oil), etc....plus it has much veggies & doesn't taste like diet food!!
