Quick Carrot Salad

I had a dream that I ran out of carrots.....I don't know why?  I was in my kitchen (in my dream) except it wasn't my kitchen, but it was.  Dreams are weird like that.  It must have left an impression on me, for two days later I was drawn to the carrot section while grocery shopping......must....need....carrots.  Strange?  Yes.

Who the fu heck dreams about carrots?  I just Googled "dreamt of carrots" and was shocked that there were several other explanations as to what this means.  Actually, there were 1,680,000 results to my online search.

Prosperity, health, and patience were symbolized by my dreamt carrots....or, that I am eating too much.

Perhaps I was haunted by this recipe:  Grilled Cheese with Roasted Carrots & Carrot Pesto.  It must have infiltrated my subconscious.

Anyhow, I now have an overabundance of carrots.  After dreaming and then shopping for carrots, I got home only to realize I HAD THEM THE WHOLE TIME!

So, if I dreamt of carrots, made this salad, then tell you about it; does that extend prosperity, health, and patience to you?  I'd like to think so.  An easy side salad, or a "Big Salad" (Elaine from Seinfeld) eaten straight from the mixing bowl.

Quick Carrot Salad
makes 2 1/2 cups

2 cups grated carrots, about 3 large
1 6oz jar marinated artichoke hearts
1/4 cup crumbled feta cheese
2 tsp extra virgin olive oil
2 tsp lemon juice
2 tsp artichoke marinade, from the jar
ground black pepper to taste
dash of hot sauce, optional

Grate carrots, slice artichokes lengthwise, combine, add feta.  Whisk olive oil, lemon juice, and marinade.  Pour over slaw, tossing well to combine.
